Christmas is the perfect time for baking and an extra perfect time for cookies! These Chocolate Crinkle Cookies taste like brownies and look so pretty. They're also very simple to make. I found this recipe on Pinterest (you can see what I'm pinning here) and it is from simplyrecipes.com. With this recipe I was able to make 24 cookies.
You will need:
1 cup cocoa powder
1 1/2 cups white sugar
1/2 cup vegetable oil
4 eggs
2 teaspoons vanilla extract
2 cups plain flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup icing sugar
Here's what you do:
- In a large bowl, combine the cocoa powder, white sugar and vegetable oil until the mixture is at a gritty consistency. You can do this by hand using a wooden spoon or using an electric mixer and paddle attachment.
- Add the eggs, mixing each in individually.
- Add the vanilla extract and mix thoroughly.
- In a separate bowl combine the flour, baking powder and salt. Then mix into the chocolate mixture until just combined. Be careful not to overbeat.
- Cover the large bowl with plastic wrap and place in the fridge to chill for 4 hours or overnight.
- Preheat the oven to 180°C and line two baking sheets with baking paper.
- Put the icing sugar in a wide bowl or on a plate. Using a spoon get pieces of the chilled dough and roll them into golf ball sized balls. Then roll the balls in the icing sugar, completely covering them.
- Place on the baking sheets and bake for 10-12 minutes. I was able to place 12 cookies on a baking sheet and I baked them one sheet at a time.
- Allow the cookies to cool slightly after removing from the oven. Then transfer to a wire rack to cool completely.
- Serve and enjoy!
These cookies were really easy to make. Creating the dough took me about 15 minutes and the rest (after chilling the dough) took just over half an hour. The cookies are soft and taste delicious! I think they're really cute and Christmassy.
