Raspberry Pancakes

Raspberry Pancakes

I absolutely love raspberries, they have to got to be one of my favourite fruits. Desserts incorporating raspberries are my go-to. I definitely consider myself a savoury breakfast person, but when I found this recipe for raspberry pancakes online (from tasteofhome.com) it sounded too good not to try!

You will need:
For 4 servings

2/3 cups all-purpose flour
1 Tbsp sugar
1 tsp baking powder
3/4 tsp baking soda
1/3 cup plain yoghurt (I used plain Greek yoghurt)
1 large egg, beaten lightly
1 Tbsp butter, melted and cooled
1/2 cup whole milk
1 cup fresh raspberries (I used frozen raspberries, thawed)
Raspberry jam (optional)
Icing sugar (optional)

Here's what you do:

  1. Combine flour, sugar, baking powder and baking soda.
  2. In a large bowl, whisk together the yoghurt, egg, butter and milk.
  3. Add dry mixture and stir until combined. Then fold in the raspberries. 
  4. Heat a frying pan to a moderately high heat. Brush with additional melted butter.
  5. Drop just under 1/4 cupfuls of batter onto frying pan (you can cook multiple at one time). Cook for 1 minute or until bubbles form. Turn and cook for another minute.
  6. Serve with raspberry jam and icing sugar.
